Home-made Falafel

I know summer is over but we have now entered the time of year when summer bodies are made. I am going to start writing more about my fitness journey/struggles, great meal recipes and tips for achieving your goal in time for summer 2016 while I try to achieve mine. Whether your just trying to be healthier and watch your food intake, trying to cut down processed foods or just attempting to look like Beyonce, the outcome all depends on what you eat.

My diet has always been my main obstacle because I love food – and not always the healthiest type. While I am fairly consistent with my workouts, it is hard to tone and lose weight when I cave in every time someone offers me a cake.

Working 9 to 6 from Monday to Friday also means I have to ensure I prepare my week’s meals in advance. Because failing to prepare means you have to prepare to fail right? One of the meals that I always enjoy and requires little time is a couscous salad with Falafel. So I decided to try this Falafel recipe on the weekend and I have to share! It was so easy, involves real ingredients and is so tasty.

Recipe: 

A can of chickpeas

1 chopped garlic clove

1 tsp cumin powder

handful of parsley

handful of coriander

1 tsp chilli powder

2 tbsp flour

1 tbsp olive oil

Salt and Pepper to taste

Method:

Mix all the ingredients and blend them. Simply roll them into small sized burgers and fry them for a few minutes on each side.

And that is literally it!

Falafel is a great source of protein and it goes really well in either a wrap or a vibrant couscous salad. I add parsley, feta, roasted butternut squash, caramelized balsamic roasted beetroot and finally crushed walnuts for a hearty salad. For the beetroot, I covered it in balsamic vinegar and a little bit of salt and roasted it in the oven for roughly 40 minutes.

Falafel also serves as a great snack that you can have mid-afternoon or before you workout. Making it at home just means you know what it’s made of and you avoid any preservatives.
